Moroccan Saffron Pappardelle
A rich and aromatic pasta dish inspired by Moroccan cuisine, featuring seffa and paccheri pasta, intensely flavored sauce and a hint of saffron.
Ingredients
- β8 oz paccheri pastapreferably seffa or other long, thin pasta
- β2 tbsp olive oil
- β1 onionchopped
- β2 cloves garlicminced
- β1 tsp ground cumin
- β1 tsp ground coriander
- β1/2 tsp saffron threadssoaked in 2 tbsp hot water
- βto taste salt
- βto taste black pepper
Instructions

Bring a large pot of salted water to a boil and cook the paccheri pasta according to package instructions.

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 2 minutes.

Stir in the ground cumin and ground coriander and cook for 1 minute.

Add the soaked saffron threads and their liquid to the skillet and cook for 1 minute.

Season with salt and black pepper to taste.

Drain the cooked pasta and add it to the skillet with the sauce.

Toss the pasta in the sauce and serve hot, garnished with additional saffron threads if desired.
