Seffa with Intensely Spiced Moroccan Pasta
A flavorful and aromatic Indian-inspired dish featuring paccheri pasta tossed with jammy seffa and intensely spiced moroccan sauce.
Ingredients
- β400g paccheri pasta
- β250g seffacooked al dente
- β200g intensely spiced moroccan sauce
- β2 tbsp olive oil
- β1 medium onionchopped
- β2 inches gingergrated
- β3 cloves garlicminced
- β1 tsp cumin
- β1 tsp coriander
- β1/2 tsp cayenne pepper
Instructions

Heat olive oil in a large pan over medium heat.

Add the chopped onion and cook until softened.

Add the grated ginger and minced garlic and cook for a further minute.

Add the cumin, coriander, and cayenne pepper and cook for 1 minute.

Add the intensely spiced moroccan sauce and stir to combine.

Add the cooked paccheri pasta and toss to coat with the sauce.

Cook for a further 2-3 minutes to allow the flavors to meld.

Stir in the cooked seffa and season to taste.
