Crispy Jamaican Fried Rice
A flavorful and crunchy twist on traditional Chinese fried rice, infused with the bold flavors of the Caribbean.
Ingredients
- β1 cup Jamaican runner beanscut into 1-inch pieces
- β2 cups Fried ricepreferably leftover or day-old rice
- β1/4 cup Intensely crunchychopped scallions or chopped peanuts for garnish
- β2 tablespoons Vegetable oilfor stir-frying
- β2 tablespoons Soy sauceor to taste
- β1 teaspoon Jamaican jerk seasoningor to taste
- βto taste Salt
- βto taste Pepper

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the Jamaican runner beans and stir-fry for 3-4 minutes, or until they start to soften.

Add the fried rice, soy sauce, and jerk seasoning, and stir-fry for another 2-3 minutes, breaking up any clumps with a spatula.

Add the chopped scallions or peanuts and stir-fry for another minute, until the rice is evenly coated with the flavors.

Season with salt and pepper to taste.

Transfer the rice to a serving platter or individual plates.
