Spicy Algerian-Style Lentil Pilaf

Ingredients
- β1 cup algerian lentilsrinsed and drained
- β2 tablespoons pilaf oilsuch as olive or avocado oil
- β1 medium oniondiced
- β2 inches gingergrated
- β1 teaspoon cuminground
- β1/4 teaspoon cayenne pepperor to taste
- β1/2 teaspoon saltor to taste
- β2 cups wateror vegetable broth
- β1/4 cup crunchy chopped almondsoptional

Instructions

Heat the pilaf oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.
