Keto Brazilian Banana Pudding
A rich and creamy pudding made with Brazilian bananas and a touch of sweetness, all within a keto diet.
Ingredients
- β4 Brazilian bananasripe
- β1 cup sweet creamheavy
- β1/2 cup pumpkin pureecanned
- β1/4 cup intenseunsweetened cocoa powder
- β2 tablespoons pork gelatinketo-friendly
- β2 tablespoons keto sugar substitutesuch as Swerve
- β4 large egg yolksroom temperature
- β1/2 cup heavy creamchilled

In a medium saucepan, combine the sweet cream, pumpkin puree, intense, and pork gelatin. Bring to a boil over medium heat, then reduce heat to low and simmer for 5 minutes.

In a separate bowl, whisk together the egg yolks and keto sugar substitute. Temper the egg yolks by slowly pouring the warm cream mixture into the egg yolks, whisking constantly.

Return the saucepan to medium heat and cook for an additional 10-12 minutes, or until the mixture has thickened and passed the 'coat the back of a spoon' test.

Stir in the heavy cream and cook for 1-2 minutes, or until heated through.

Peel and slice the Brazilian bananas. Serve the pudding over the bananas, or layer the bananas and pudding in individual serving dishes.
