Spicy Vietnamese Pho
A flavorful and spicy Vietnamese noodle soup made with pork and a variety of herbs and spices.
Ingredients
- β1 pound Rice noodles
- β2 pounds Pork bonesask for pork neck bones at the butcher
- β1 pound Pork shoulder
- β1 medium Onion
- β2 inches Ginger
- β3 cloves Garlic
- β2 tablespoons Spicy Vietnamese chili saucesuch as sambal oelek
- β2 tablespoons Fish sauce
- β2 tablespoons Soy sauce
- β1 teaspoon Black pepper

Bring the pork bones to a boil in 4 quarts of water, then reduce the heat to a simmer and cook for 1 hour.

Remove the pork bones and set them aside.

Slice the pork shoulder thinly and cook it in a pan with a little oil until browned, then set it aside.

Mince the onion, ginger, and garlic, and cook them in a pan until fragrant.

Add the chili sauce, fish sauce, and soy sauce to the pan and cook for 1 minute.

Add the sliced pork back to the pan and cook for 2-3 minutes.

Add the cooked pork bones back to the pot and simmer for 10 minutes.

Cook the rice noodles according to the package instructions and set them aside.

To assemble the pho, place some noodles in a bowl, add some sliced pork and bones, and pour the hot broth over the top.

Garnish with herbs such as basil, mint, and cilantro, and serve immediately.
