Agedashi Tofu Recipe
A traditional Japanese dish where tofu is deep-fried and served in a light broth. This recipe showcases the delicate balance of flavors and textures.
Ingredients
- ●1 block (14 oz) tofuExtra-firm, drained and cut into bite-sized pieces
- ●1/2 cup all-purpose flourFor dusting tofu
- ●2 tbsp cornstarchFor dusting tofu
- ●2 cups vegetable oilFor deep-frying tofu
- ●4 cups dashi brothStore-bought or homemade
- ●2 tbsp soy sauceFor serving
- ●2 tbsp sake (Japanese rice wine)For serving
- ●2 tbsp mirinFor serving
- ●1 bunch green onionsFor garnish

Dust the tofu pieces with cornstarch and flour, shaking off excess.

Heat the vegetable oil in a deep frying pan to 350°F (180°C).

Deep-fry the tofu in batches until golden brown, about 3-4 minutes per side.

Using a slotted spoon, transfer the fried tofu to a plate.

Reduce the oil temperature to 275°F (135°C).

In a separate saucepan, combine the dashi broth, soy sauce, sake, and mirin.
