Smoked Salmon Dutch Pancakes

Ingredients
- β1 1/2 cups All-purpose flourDutch flour is ideal, but regular flour works too
- β2 Large eggs
- β1 cup Whole milk
- β6 oz Smoked salmonFlaked
- β4 tbs Unsalted butter
- β1/4 cup Diced shallots
- β1 tbs Fresh dillChopped
- β1/2 tsp Salt
- β1/4 tsp Black pepper

In a large bowl, whisk together the flour, eggs, and milk until smooth.

Heat a non-stick pan over medium heat and melt 2 tbs of butter.

Add the diced shallots and cook until translucent.

Pour in the batter and cook until bubbles form on the surface.

Flip the pancake and cook until golden brown.

Meanwhile, mix the smoked salmon with dill and season with salt and pepper.

Add the salmon mixture to one half of the pancake.
