Thai Crunchy Potato Fritters
Crispy and delicious Thai-style fritters made with potatoes and a hint of spice.
Ingredients
- β2 large Potatoes
- β1 cup All-purpose flour
- β2 tablespoons Cornstarch
- β2 tablespoons Grated ginger
- β1 tablespoon Thai red curry paste
- β1 Egg
- β1/2 cup Vegetable oil
- βto taste Salt
- βto taste Pepper
- βchopped, for garnish Scallions

Grate the potatoes and squeeze out excess moisture.

In a large bowl, combine the grated potatoes, flour, cornstarch, ginger, curry paste, egg, salt, and pepper. Mix well.

Heat the vegetable oil in a deep frying pan over medium-high heat.

Using a spoon, drop small amounts of the potato mixture into the hot oil.

Fry the fritters until they are golden brown and crispy, about 3-4 minutes per side.
