Jamaican Codfish Fritters
A Caribbean-inspired dish made with codfish, spices, and crispy fritters.
Ingredients
- β1 pound Codfish
- β1/4 cup Icy cold water
- β1 teaspoon Jamaican allspice
- β1 cup Panko breadcrumbs
- β1/2 cup Vegetable oil
- βto taste Salt
- βto taste Black pepper
- β1 small Onionfinely chopped
- β1 small Scotch bonnet pepperfinely chopped
- β4-6 Frittersdepending on size

In a large bowl, combine codfish, icy cold water, allspice, salt, and pepper. Mix well and let marinate for at least 30 minutes.

Preheat the oil in a deep frying pan over medium-high heat.

Add the onion and Scotch bonnet pepper to the bowl with the codfish mixture and mix well.

Using your hands, shape the codfish mixture into small patties, about 1 1/2 inches in diameter.

When the oil is hot, add 2-3 patties to the pan (do not overcrowd). Fry for 3-4 minutes on each side, or until golden brown and cooked through.

Using a slotted spoon, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

Repeat the process with the remaining codfish mixture.

Serve the fritters hot with your favorite dipping sauce, such as a spicy mango salsa or a tangy remoulade.
