Spicy Malaysian Chicken Satay
A classic Malaysian dish of marinated chicken grilled to perfection and served with spicy peanut sauce.

- β500g Chicken breastCut into skewer-sized pieces
- β200ml Coconut milkFor marinade
- β2 tbsp Peanut oilFor grilling
- β200ml Spicy peanut sauceStore-bought or homemade
- β2 stalks LemongrassFor marinade
- β2 inches GingerFor marinade
- β2 cloves GarlicFor marinade
- β2 tbsp Brown sugarFor marinade
- β1 tsp SaltFor marinade
- β1 tsp Black pepperFor marinade

1. In a blender or food processor, blend together coconut milk, lemongrass, ginger, garlic, brown sugar, salt, and black pepper to make marinade.

2. Add chicken pieces to the marinade and mix well. Cover and refrigerate for at least 2 hours or overnight.

3. Preheat grill to medium-high heat. Thread marinated chicken onto skewers.
