Saudi Arabian Roast Lamb
A flavorful and aromatic dish inspired by Saudi Arabian cuisine, featuring a deliciously seasoned roast lamb.
Ingredients
- ●1 (1.5-2 kg) Herbed Lamb ShoulderAsk your butcher to have it prepared with the herbs
- ●2 tbsp RoastMiddle Eastern-style roast
- ●2 tbsp Arabian SpicesMix of cumin, coriander, cinnamon, cardamom, and black pepper
- ●2 tbsp Olive OilFor brushing the lamb
- ●2 tbsp Lemon JuiceFor marinade
- ●2 cloves GarlicMinced
- ●1-inch piece GingerGrated
- ●1/4 cup Chopped Fresh ParsleyFor garnish

Preheat the oven to 425°F (220°C).

In a large bowl, whisk together olive oil, lemon juice, garlic, ginger, and Arabian Spices.

Add the lamb shoulder to the marinade, turning to coat evenly. Cover and refrigerate for at least 2 hours or overnight.

Remove the lamb from the refrigerator and let it sit at room temperature for 30 minutes.

Place the lamb on a roasting pan and rub the roast all over the lamb.

Roast the lamb in the preheated oven for 20 minutes per kilogram, or until it reaches an internal temperature of 145°F (63°C) for medium-rare.
