Syrian Vegetable Stew
A hearty and flavorful stew made with tender vegetables and aromatic spices, inspired by the cuisine of Syria.
Ingredients
- β2 tablespoons Syrian olive oil
- β1 medium, chopped onionabout 2 cups
- β3 cloves, minced garlic
- β1 head, chopped crisp lettuce
- β1 cup, sliced stew vegetables
- β2 cups, brewed and cooled herbal tea
- β1 teaspoon crushed red pepper
- β1 teaspoon ground cumin
- β1 teaspoon salt
- β1/4 teaspoon black pepper

Heat the olive oil in a large saucepan over medium heat.

Add the onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes.

Add the garlic and cook for 1 minute, stirring constantly.

Add the lettuce, stew vegetables, herbal tea, crushed red pepper, cumin, salt, and pepper. Stir to combine.

Bring the mixture to a simmer.

Reduce the heat to low and cook, covered, until the vegetables are tender, about 20 minutes.
