Kenyan Chicken Biryani
Hearty and flavorful, this chicken biryani is a twist on traditional Kenyan cuisine. Perfect for a weeknight dinner or special occasion.
Ingredients
- β1 pound chicken breast
- β2 cups long-grain rice
- β1 medium onion
- β2 inches ginger
- β3 cloves garlic
- β1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon turmeric, 1/2 teaspoon cayenne pepper spices
- β2 tablespoons coconut oil
- β1 cup canned diced tomatoes
- β2 cups chicken broth
- βto taste salt

Heat 1 tablespoon of coconut oil in a large pan over medium heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the ginger and garlic and cook for an additional 1 minute.

Add the chicken and cook until browned on all sides, about 5-6 minutes.

Add the spices, diced tomatoes, and chicken broth. Stir to combine.

To assemble the biryani, place a layer of rice in the bottom of a large serving dish.
