Turkish Holiday Menemen
A hearty and flavorful Turkish-inspired breakfast dish, perfect for holidays. Menemen is a traditional Turkish omelette filled with spices and vegetables.
Ingredients

- β1 cup crushed tomatoescanned
- β1/2 cup feta cheesecrumbly
- β4 large eggs
- β1/4 teaspoon cayenne pepperto taste

Heat 1 tablespoon of oil in a large skillet over medium heat.

Add the chopped onion and sautΓ© until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the diced red bell pepper and cook until tender, about 4-5 minutes.

Stir in the crushed tomatoes, cayenne pepper, salt, and black pepper.

Create 4 wells in the mixture and crack an egg into each well.

Scramble the eggs until cooked through, breaking them up with a spatula.

Stir in the crumbled feta cheese and chopped parsley.
