Cranberry and Prosciutto Menemen
A Turkish-inspired breakfast dish with an Italian twist, featuring crispy prosciutto and sweet cranberries.
Ingredients
- β6 slices Prosciutto
- β1/2 cup Cranberries
- β1 tsp Menemen Spice Mixor Italian seasoning blend
- β1/4 cup chopped Fresh parsley
- β1/4 cup crumbled Feta cheeseoptional
- β4 Eggs
- β2 tbsp Olive oil

1. Preheat a non-stick skillet over medium heat.

2. Add 1 tablespoon olive oil and cook the prosciutto until crispy, about 3-4 minutes.

3. Remove the prosciutto from the skillet and set aside.

4. In the same skillet, add the remaining 1 tablespoon olive oil.

5. Crack in the eggs and scramble them until they're just set.

6. Add the menemen spice mix and stir to combine.

7. Stir in the cranberries and cook for an additional 2 minutes.

8. Use a spatula to create 4 wells in the egg mixture.

9. Crack a prosciutto slice into each well.

10. Sprinkle with feta cheese and chopped parsley, if using.
