Egyptian Stew
A hearty, Egyptian-inspired stew made with chickpeas and a blend of spices.
Ingredients
- β1 can (15 oz) chickpeasdrained and rinsed
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tsp cumin
- β1 tsp coriander
- β1/2 tsp cayenne pepper
- β1 can (14.5 oz) tomatoesdiced
- β4 cups vegetable broth
- β2 tbsp olive oil

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the cumin, coriander, and cayenne pepper. Cook for 1 minute, stirring constantly.

Add the chickpeas, diced tomatoes, and vegetable broth. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes.
