Charred Potato Gratin
A hearty Ukrainian-inspired side dish made with charred potatoes, gold potatoes, and a crispy gratin topping.
Ingredients
- β3 large Yukon gold potatoes
- β2 large Hearty potatoes
- β2 tablespoons Olive oil
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1/4 teaspoon Garlic powder
- β2 tablespoons Chopped fresh parsley

Preheat the oven to 400Β°F (200Β°C).

Char the potatoes by placing them on a baking sheet and cooking them in the oven for 10 minutes, or until they have a nice char on the outside.

Remove the potatoes from the oven and let them cool slightly.

In a large bowl, combine the charred potatoes, olive oil, salt, black pepper, and garlic powder.

Mix well to combine.

Transfer the potato mixture to a 9x13 inch baking dish.

Sprinkle the chopped parsley on top of the potatoes.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender.
