Thai Hash and Ackee Omelette
A twist on traditional Thai street food, combining ackee with a spicy hash for a delicious breakfast.
Ingredients
- β1 can Ackee
- β1 cup Hash
- β4 Scrambled eggsFreshly beaten
- β2 Thai red chili peppers
- β1/2 cup Green onions
- β1 tsp Fish sauce
- β1 tsp Soy sauce
- βto taste Salt and pepper

1. Crack the eggs into a bowl and beat them with a fork until they're well mixed.

2. Add the fish sauce and soy sauce to the bowl and mix again.

3. Heat a non-stick pan over medium heat and add the hash.

4. Cook the hash for 2-3 minutes, breaking it up with a spatula as it cooks.

5. Add the ackee to the pan and stir to combine with the hash.

6. Pour the egg mixture over the ackee and hash.

7. Sprinkle the green onions and Thai red chili peppers over the top.

8. Cook the omelette for 2-3 minutes, until the eggs are set.

9. Use a spatula to fold the omelette in half.
