Mexican Hash and Ackee Breakfast Burrito
A twist on traditional breakfast burritos, this dish combines the flavors of Mexico with the creaminess of ackee and the crunch of hash.
Ingredients
- β1 cup Ackeecanned or fresh
- β1 cup Hashdiced and pan-fried
- β4 Scrambled eggsfreshly scrambled
- β1/2 cup Mexican cheese blendshredded
- β1 Tortillaflour or corn
- β2 tbsp Salsamild or spicy
- β1 tbsp Chopped cilantrofreshly chopped
- βto taste Salt and pepperfreshly ground

1. Scramble the eggs in a bowl and set aside.

2. Pan-fry the hash until crispy and set aside.

3. Heat a tortilla in a dry pan for 30 seconds on each side.

4. Add the scrambled eggs to the tortilla and top with a spoonful of ackee, hash, and Mexican cheese blend.

5. Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the burrito up.

6. Heat a small amount of oil in a pan over medium heat.

7. Add the burrito to the pan and cook for 2-3 minutes on each side, until the tortilla is crispy and the filling is heated through.

8. Serve hot with a side of salsa and chopped cilantro.
