Kenyan Stew with Matooke
A hearty and flavorful Kenyan stew made with tender matooke and served with a side of hangover cure.
Ingredients
- ●1 bunch matookecut into 1 inch pieces
- ●1 cup hangover cureused to add flavor to the stew
- ●2 tbsp kenyan stew spiceavailable at most spice stores
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 tbsp tomato pasteused to add depth of flavor
- ●2 tbsp vegetable oilused for sautéing
- ●to taste saltused to season the stew

Heat 1 tbsp of vegetable oil in a large pot over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and sauté for another minute.

Add the kenyan stew spice and sauté for 1 minute.

Add the tomato paste and sauté for 1 minute.

Add the matooke, hangover cure, and vegetable oil to the pot.

Stir well to combine and bring the stew to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes, or until the matooke is tender.

Season the stew with salt to taste.

Serve hot, garnished with chopped fresh herbs if desired.
