Kho Bo Beef Stew
A hearty, earthy Vietnamese-inspired beef stew made with locally sourced ingredients.
Ingredients

- ●chopped Gourmet Onions (1 large)
- ●peeled and chopped Earthy Carrots (3 large)
- ● Vietnamese Fish Sauce (2 tbsp)
- ● Bo Kho Spice Mix (2 tsp)available at Asian markets
- ● Beef Broth (4 cups)homemade or store-bought
- ● Water (2 cups)
- ● Salt (1 tsp)
- ● Black Pepper (1/2 tsp)

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef cubes in batches until browned on all sides.

Remove the browned beef from the pot and set aside.

Add more oil to the pot if necessary, then sauté the chopped onions until softened.

Add the chopped carrots, fish sauce, and Bo Kho Spice Mix to the pot. Stir to combine.

Add the browned beef back to the pot, along with the beef broth and water.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1.5 hours.

Season the stew with salt and black pepper to taste.
