Braised Aubergine with French Twist

Ingredients

- ●1 tsp uruguayan oregano
- ●2 cloves garlic
- ●2 tbsp olive oil

Instructions

Preheat the oven to 375°F (190°C).

Cut the aubergine into 1-inch cubes and place on a baking sheet.

Drizzle with 1 tbsp of olive oil and sprinkle with uruguayan oregano.

Toss to coat, then roast in the oven for 20 minutes.

While the aubergine is roasting, heat the remaining 1 tbsp of olive oil in a pan over medium heat.
