Crunchy Taco Casserole
A fusion of Mexican flavors and textures in a satisfying casserole. The golden, crispy tortilla chips add a delightful crunch to each bite.
Ingredients
- ●1 1 (1.25 oz) package of taco seasoning
- ●1 1 lb ground beefBrown the beef in a pan over medium-high heat. Drain excess fat.
- ●1 1 can of diced tomatoes
- ●1 1 cup of shredded mexican cheese
- ●1 1 cup of shredded monterey jack cheese
- ●1 1 cup of crushed golden tortilla chips
- ●1 1/4 cup of diced onion
- ●1 1/4 cup of diced bell pepper
- ●1 8-10 corn tortillas
- ●1 1 tablespoon of olive oilFor greasing the baking dish
Instructions

Preheat oven to 350°F (180°C). Grease a 9x13 inch baking dish with olive oil.

Brown the ground beef in a pan over medium-high heat. Drain excess fat.

Add taco seasoning to the ground beef and cook according to package instructions.

In a separate pan, sauté diced onion and bell pepper until softened.

In a large mixing bowl, combine cooked ground beef, diced tomatoes, cooked onion and bell pepper, and shredded cheese.

Arrange 4-5 corn tortillas in the bottom of the prepared baking dish.

Spoon half of the beef mixture over the tortillas.

Sprinkle half of the shredded cheese and half of the crushed tortilla chips over the beef mixture.

Repeat the layers, starting with the tortillas, then the remaining beef mixture, and finally the remaining cheese and tortilla chips.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
