Middle Eastern Falafel Bowl
A flavorful and refreshing bowl filled with crispy falafel, sweet dates, and crunchy lettuce served over a bed of rice.
Ingredients
- β4-6 Falafel
- β4-6 Pitted Dates
- β4 cups, chopped Lettuce
- β2 cups Cooked White Rice
- β1 cup Chopped Cucumber
- β1 cup Tahini Sauce
- β4-6 slices Pita Bread (gluten-free)
- β1/4 cup Chopped Fresh Parsley
- β2 tbsp Lemon Juice
- βto taste Salt and Pepper
Instructions

Cook the white rice according to package instructions.

Chop the lettuce and cucumber into small pieces.

Slice the pita bread into smaller pieces.

Warm the tahini sauce in a small pan over low heat.

Assemble the falafel bowls by placing a scoop of cooked rice at the bottom, followed by a few pieces of falafel, some chopped lettuce and cucumber, and a drizzle of tahini sauce.

Serve immediately and garnish with chopped fresh parsley and a squeeze of lemon juice.
