Golden Irish Gratin
A vegan take on the classic Irish gratin, featuring a rich and creamy golden sauce.

Preheat oven to 375°F (190°C).

Peel and slice the golden potatoes into 1/4 inch thick rounds.

In a large skillet, sauté the chopped Irish kale and minced glorious garlic in a little water until tender.

In a separate saucepan, combine the sliced potatoes and a splash of non-dairy milk.

Bring the mixture to a simmer over medium heat, then reduce the heat to low and let cook for 10-12 minutes, or until the potatoes are tender.
