Irish and Golden Mexican Gratin
A creamy, cheesy twist on traditional Mexican dishes, this gratin combines the richness of golden cheese with the bold flavors of Irish cuisine.
Ingredients
- β2 pounds, peeled and thinly sliced potatoes
- β1 cup, shredded glorious golden cheesesuch as cheddar or Monterey Jack
- β1/2 cup, crumbled irish cheesesuch as Dubliner or Colman's
- β1/4 cup, grated gratinsuch as Parmesan
- β1 large, thinly sliced onion
- β3 cloves, minced garlic
- β1 teaspoon chili powder
- β1/2 teaspoon cumin
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper

Preheat oven to 375Β°F (190Β°C).

In a large bowl, combine sliced potatoes, chili powder, cumin, salt, and black pepper. Mix well to coat.

In a greased 9x13 inch baking dish, arrange half of the potato slices in the bottom of the dish.

In a separate bowl, combine shredded golden cheese, crumbled Irish cheese, and grated gratin. Mix well to combine.

Spread half of the cheese mixture over the potatoes in the baking dish.

Repeat layers, starting with the remaining potato slices, then the remaining cheese mixture.

Bake for 45-50 minutes, or until the top is golden brown and the potatoes are tender.
