Thai Chicken and Spinach Stir Fry
A spicy and savory Thai-inspired stir fry made with chicken, spinach, and a blend of Thai seasonings.
Ingredients
- β1 pound chicken breast
- β1 package spanakopitacrumbly feta cheese
- β2 tablespoons garlicky olive oil
- β1 Thai red chillisliced
- β2 tablespoons zesty lime juice
- β1 tablespoon greek honey
- β1/2 teaspoon chilli flakes

1. Heat the garlicky olive oil in a large skillet or wok over medium-high heat.

2. Add the chicken breast and cook until browned on both sides and cooked through.

3. Remove the chicken from the skillet and set aside.

4. Add the Thai red chilli to the skillet and cook for 1-2 minutes until fragrant.

5. Add the crumbled spanakopita to the skillet and cook until lightly browned.

6. Add the zesty lime juice, greek honey, and chilli flakes to the skillet and stir to combine.

7. Add the cooked chicken back to the skillet and stir to combine with the sauce.

8. Cook for an additional 1-2 minutes until the sauce has thickened.
