Jamaican Squash Curry
A flavorful and aromatic curry made with roasted squash, Jamaican spices, and fried onions. Serve as a side dish or add to rice or roti for a filling meal.
Ingredients
- β2 tablespoons Jamaican curry powder
- β1 medium Squash (acorn or butternut)
- β1/4 cup Fried onions
- β2 tablespoons Coconut oil
- β1 medium Onion
- β3 cloves Garlic
- β1-inch piece Ginger
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β2 tablespoons Chopped fresh cilantro

1. Preheat oven to 400Β°F (200Β°C).

2. Cut the squash in half and scoop out the seeds. Place on a baking sheet and roast for 30 minutes.

3. In a large pan, heat the coconut oil over medium heat. Add the onion, garlic, and ginger and cook until the onion is translucent.

4. Add the curry powder and cook for 1 minute.

5. Add the roasted squash to the pan and stir to combine with the curry powder mixture.
