Squash Curry Stir Fry
A Chinese-inspired stir fry with roasted squash and a flavorful curry sauce. Perfect for a quick weeknight dinner.
Ingredients
- β1 medium Squash
- β2 teaspoons Jamaican Curry Powderor substitute with regular curry powder
- β1 tablespoon Vegetable Oil
- β2 cloves Garlicminced
- β1-inch piece Gingergrated
- β2 tablespoons Soy Sauce
- β1 tablespoon Brown Sugar
- βchopped (optional) Fresh Cilantro

Preheat oven to 400Β°F (200Β°C).

Toss the squash with 1 tablespoon of vegetable oil and roast in the oven for 20 minutes.

In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

Add the minced garlic and grated ginger and cook for 1 minute.

Add the Jamaican curry powder and cook for 1 minute, stirring constantly.

Add the roasted squash and cook for 2-3 minutes, until coated in the curry sauce.
