Poached Chicken and Basil Stir-Fry
A quick and easy dish that combines the flavors of poached chicken and fresh basil in a tasty stir-fry.
Ingredients
- β1 lb boneless, skinless chicken breastpoached
- β1/4 cup basil leaveschopped
- β2 tbsp vegetable oilfor frying
- β2 garlic clovesminced
- β1 bell peppersliced
- β2 tbsp stir-fry saucestore-bought or homemade
- βto taste salt
- βto taste pepper
Instructions

Poach the chicken breast in boiling water for 10-12 minutes, or until it reaches an internal temperature of 165Β°F.

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the sliced bell pepper and cook for 3-4 minutes, until tender.

Add the chopped basil leaves and cook for 1 minute, until wilted.

Add the poached chicken to the wok or skillet and stir in the stir-fry sauce.
