Ethiopian Dabo Stuffed with Spinach
A traditional Ethiopian flatbread filled with a flavorful spinach mixture, perfect for a snack or light meal.
Ingredients
- ●2-3 pieces Dabo (Ethiopian flatbread)available at most international grocery stores or online
- ●1 bunch Fresh spinachstems removed, chopped
- ●1/4 cup Crispy onionschopped
- ●2 cloves Garlicminced
- ●1 tsp Ethiopian spices berbere spice blend or to taste
- ●to taste Salt
- ●to taste Black pepper

Preheat oven to 375°F (190°C).

Cut the dabo into squares and set aside.

In a pan over medium heat, sauté the chopped onions until crispy.

Add minced garlic and cook for an additional 1-2 minutes.

Add chopped spinach to the pan and cook until wilted.

Stir in berbere spice blend and season with salt and pepper to taste.

Spoon the spinach mixture onto the center of each dabo square.

Fold the dabo squares in half to enclose the filling and press edges to seal.

Place the stuffed dabo on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until crispy and golden brown.
