Jamaican Goat Stew
A flavorful and hearty stew from the Caribbean, made with tender goat meat and a blend of aromatic spices.
Ingredients
- β1 pound, cut into 1-inch cubes goat
- β2 sprigs fresh thyme
- β6 slices chewy bacon
- β1 large, chopped onion
- β3 cloves, minced garlic
- β1 teaspoon, ground allspice
- β1-2, seeded and chopped (optional) scotch bonnet pepper
- β2 tablespoons tomato paste
- β1 cup, chopped stew

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the bacon and cook until crispy, then remove and set aside.

Add the goat to the pot and cook until browned on all sides, about 5 minutes.

Add the onion, garlic, thyme, allspice, and scotch bonnet pepper (if using) to the pot.

Cook until the onion is translucent, about 5 minutes.

Add the tomato paste to the pot and cook for 1 minute.

Add the stew, bacon, and enough stock to cover the goat.

Bring to a boil, then reduce the heat to low and simmer, covered, until the goat is tender, about 2 hours.
