French Pork Rillettes
A French-inspired spread made with slow-cooked pork and served with crackers or bread.
Ingredients

- ●1 tsp Flaky sea salt
- ●1/2 tsp Black pepper
- ●2 tbsp Formed pork fat (such as pancetta or guanciale)
Instructions

Preheat the oven to 275°F (135°C).

Season the pork shoulder with flaky sea salt and black pepper.

Heat the formed pork fat in a large Dutch oven over medium heat.

Sear the pork shoulder until browned on all sides, about 5 minutes.

Transfer the Dutch oven to the preheated oven and slow cook the pork for 2-1/2 hours, or until tender.

Remove the pork from the oven and let it cool slightly.

Using two forks, shred the pork into bite-sized pieces.

Strain the pork fat and discard any solids.

Mix the shredded pork with the strained pork fat and season with flaky sea salt and black pepper.
