Flaky Uruguayan-Style Vegetable Casserole
A vegetarian take on the classic Uruguayan dish, this casserole features flaky pastry and a variety of roasted vegetables.
Ingredients

- ●1 sheet Flaky Uruguayan Pastry
- ●2 tablespoons Butter
- ●1 large Eggplant
- ●1 medium Zucchini
- ●1 cup Mushrooms
- ●3 cloves Garlic
- ●1 large Tomato
- ●1 cup Cheddar Cheese (optional)

Preheat oven to 375°F (190°C).

Peel and slice the onion, eggplant, zucchini, and mushrooms.

In a large skillet, sauté the vegetables in butter until tender.

Add garlic and cook for an additional minute.

In a separate bowl, mix the sliced tomato and cheddar cheese (if using).

Roll out the flaky pastry and place in a one-pot casserole dish.
