Mexican Date Casserole
A flavorful Mexican-inspired casserole made with sweet dates and a hint of silky texture. Perfect for a weeknight dinner.
Ingredients
- β1 loaf, cubed Portuguese sweet breadpreferably day-old bread
- β1 cup, chopped Pitted datesfresh or dried
- β1 can Canned black beansdrained and rinsed
- β1/2 cup, crumbled Fermented cheesesuch as queso fresco
- β1/2 cup Silky sour creamoptional
- β1/4 cup Chopped fresh cilantrooptional
- β1 tsp Ground cuminground
- β1 tsp Smoked paprikasmoked
- β Salt and pepperto taste

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 1 tbsp oil over medium heat.

Add cumin and smoked paprika, cooking for 1 minute.

Add black beans and cook until heated through.

In a separate bowl, mix together bread, dates, and cheese.

In a greased 9x13 inch baking dish, create a layer of bread mixture.

Top with bean mixture and repeat layers.

Drizzle with sour cream, if using.
