Dongbei Vegan Lo Rice Bowl
A hearty, flavorful bowl filled with Dongbei-style lo, served over rice and topped with crisp vegetables.
Ingredients
- β1 cup lopreferably Dongbei-style
- β1 cup ricepreferably short-grain
- β1 tablespoon dongbeiDongbei-style stir-fry sauce
- β1 teaspoon exotic spice blendoptional
- β1 cup crisp bell peppersliced
- β1 cup crisp carrotsliced
- β1/4 cup meen chiveschopped

Heat 2 cups of water in a medium saucepan over high heat.

Bring to a boil, then add 1 cup of uncooked rice.

Reduce heat to low, cover, and simmer for 15 minutes.

While the rice cooks, heat 1 tablespoon of Dongbei-style stir-fry sauce in a large skillet over medium-high heat.

Add 1 cup of sliced bell pepper and 1 cup of sliced carrot to the skillet.

Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.

Add 1 cup of lo to the skillet, breaking it up with a spoon as it cooks.

Stir-fry for 2-3 minutes, or until the lo is heated through.

Fluff the cooked rice with a fork and divide it among bowls.

Top the rice with the lo and vegetable mixture, and garnish with chopped meen chives.
