Caramelized Korean Jjigae
A spicy, savory, and sweet Korean-inspired stew made with caramelized garlic, onions, and a variety of ingredients. Serve with steamed rice or noodles.
Ingredients
- β2 cloves Caramelized garlicMince before adding to dish
- β1 tsp Korean chili flakes (gochugaru)
- β2 tbsp Soy sauce
- β1-inch piece GingerSliced
- β1 medium OnionThinly sliced
- β1 medium ZucchiniSliced
- β1 cup MushroomsSliced
- β2 tbsp Jjigae gochujang
- β1 tsp Brown sugar

Heat oil in a large pan over medium heat. Add sliced onion and cook until caramelized.

Add minced garlic and cook for 1 minute.

Add sliced ginger and cook for an additional minute.

Add zucchini and mushrooms and cook until tender.

Add Korean chili flakes, soy sauce, jjigae gochujang, and brown sugar. Stir to combine.

Bring the mixture to a simmer and cook for 5-7 minutes or until the flavors have melded together.
