Smoky Kung Pao Stir Fry
A spicy and savory Chinese dish made with marinated chicken, peanuts, and vegetables.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β1/2 cup peanutschopped
- β2 tablespoons stir-fry oil
- β2 tablespoons soy sauce
- β3 cloves garlicminced
- β1 tablespoon gingergrated
- β1 cup bell pepperssliced
- β1 cup scallionssliced
- β1/4 cup toasted peanuts
- β1 tablespoon sugar

1. Heat stir-fry oil in a wok or large skillet over medium-high heat.

2. Add chicken and cook until browned, about 5 minutes.

3. Remove chicken from the wok and set aside.

4. Add soy sauce, garlic, and ginger to the wok and stir-fry for 1 minute.

5. Add bell peppers and scallions to the wok and stir-fry for 2 minutes.

6. Return chicken to the wok and stir-fry for 1 minute.
