Chives and Earthy Borek
A flavorful twist on traditional borek, featuring earthy mushrooms and chives.
Ingredients
- β1 package (usually 20-24 sheets) Phyllo dough
- β1 cup, sliced Mushrooms (earthy)
- β1/4 cup, chopped Chives
- β1/2 cup, crumbled Feta cheese (optional)omit for vegetarian version
- β1/4 cup, chopped Spinach
- β2 tbsp Olive oil
- βto taste Salt
- βto taste Black pepper

Preheat oven to 375Β°F (190Β°C).

Thaw the phyllo dough according to package instructions.

In a pan, heat olive oil over medium heat. Add the mushrooms and cook until they release their moisture and start browning.

Add the chopped chives, spinach, salt, and pepper to the pan and cook for another minute.

Unroll the phyllo dough and cut it into 4 equal pieces.

Place a piece of phyllo on a flat surface and brush it with some oil. Repeat with the remaining pieces.

Place a spoonful of the mushroom mixture onto the center of one piece of phyllo, and fold the dough over the filling to form a triangle.

Brush the top of the borek with some oil and repeat with the remaining pieces.

Place the borek on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.

Serve warm, garnished with additional chives if desired.
