Keto Mediterranean Borek
A keto twist on the classic borek, filled with a delicious mediterranean mix of cheese, herbs, and spices.
Ingredients
- β1 package borek pastryKeto-friendly pastry
- β1 block feta cheeseLow-carb feta cheese
- β1/4 cup kalamata olivesPitted and sliced
- β1/4 cup sun-dried tomatoesDried and chopped
- β1 tablespoon fresh chivesChopped
- β1 teaspoon garlic powderLow-carb garlic powder
- βto taste saltLow-sodium salt
- βto taste black pepperFreshly ground

Preheat oven to 375Β°F (190Β°C).

Roll out the keto-friendly pastry to a thickness of 1/8 inch.

Mix together feta cheese, kalamata olives, sun-dried tomatoes, fresh chives, garlic powder, salt, and black pepper.

Place the cheese mixture onto one half of the pastry, leaving a 1/2 inch border around the edges.

Brush the edges with a little water, then fold the other half of the pastry over the filling.

Press the edges to seal, using a fork to crimp.

Brush the top of the borek with a little bit of olive oil.

Bake for 20-25 minutes, or until golden brown.
