Beef Tagine with French Flair
A classic Moroccan tagine with a French twist, featuring tender beef and aromatic spices.
Ingredients
- β1.5 pounds Beef (short ribs)cut into 2-inch pieces
- β2 tablespoons Middle Eastern spicesa mix of cumin, coriander, and cinnamon
- β1 cup Earthy mushroomssliced
- β1/2 cup Dense olivespitted
- β1/2 cup Eastern dried apricotschopped
- β2 cups Beef brothlow-sodium
- β1 unit Taginea traditional Moroccan clay pot
- β2 tablespoons Olive oil
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Season the beef with salt, black pepper, and Middle Eastern spices.

Heat the olive oil in the tagine over medium-high heat.

Sear the beef until browned on all sides, then remove and set aside.

Add the sliced mushrooms to the tagine and cook until they release their moisture and start to brown.

Add the chopped olives, dried apricots, and beef broth to the tagine.

Return the beef to the tagine and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 2 1/2 hours, or until the beef is tender.
