Moroccan Beef Tagine
A hearty and flavorful stew originating from the Middle East, made with tender beef and aromatic spices.
Ingredients
- β1 cup Dried apricotsdried
- β2 lbs Beef short ribscut into 2-inch pieces
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 inches Gingergrated
- β2 tsp Cuminground
- β1 tsp Cinnamonground
- β1 tsp Turmericground
- β1 tsp Paprikasweet
- β1 tsp Saltkosher
- β1/2 tsp Black pepperfreshly ground
- β2 tbsp Olive oilextra virgin

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef on all sides, about 5 minutes. Remove from pot and set aside.

Reduce heat to medium and cook the onion until softened, about 5 minutes.

Add garlic, ginger, cumin, cinnamon, turmeric, paprika, salt, and pepper. Cook for 1 minute.

Add the browned beef back to the pot, along with the dried apricots and 2 cups of water.

Bring to a boil, then cover and transfer to the oven.

Braise for 2 1/2 hours, or until the beef is tender and the sauce has thickened.

Serve hot, garnished with fresh herbs if desired.
