Tasty Chilaquiles Casserole
A flavorful breakfast dish with crispy tortilla chips, melted cheese, and a hint of Mexican spices.
Ingredients

- β2 cups Milk
- β1 cup shredded Monterey Jack cheese
- β1/4 cup Salsa
- β1 tablespoon chopped Cilantro
- β1 teaspoon Earthly spicesoptional
- β1/4 cup Plants-based sour cream
- β4 Eggs

Preheat your oven to 350Β°F (180Β°C).

In a large bowl, whisk together milk, eggs, and a pinch of salt.

Stir in the shredded cheese until well combined.

Arrange half of the tortilla chips in the bottom of a 9x13 inch baking dish.

Pour the milk and egg mixture over the tortilla chips.

Sprinkle the remaining tortilla chips on top.

Bake for 25-30 minutes, or until the casserole is set and the cheese is melted.

Remove from the oven and top with salsa, cilantro, and plants-based sour cream.
