Norwegian Lamb Stew
A hearty, comforting stew made with lamb, Norwegian ingredients, and a touch of herbal flavor.
Ingredients
- ●2 pounds Lamb shouldercut into 2-inch pieces
- ●2 cups Dense root vegetablessuch as carrots and turnips
- ●2 tablespoons Norwegian herbssuch as thyme and rosemary
- ●4 cups Stew brothhomemade or store-bought
- ●1 cup Red wineoptional
- ●to taste Salt and pepper

Heat oil in a large Dutch oven over medium-high heat.

Brown the lamb on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Add more oil if necessary and sauté the root vegetables until tender, about 5 minutes.

Add the herbs and cook for 1 minute.

Add the stew broth, red wine (if using), and browned lamb to the pot.

Bring to a boil, then cover and transfer to the oven.

Bake at 300°F (150°C) for 2 hours, or until the lamb is tender.
