Ethiopian Lentil Stew
A flavorful and spicy Ethiopian-inspired stew made with red lentils and a variety of spices, perfect for a keto diet.
Ingredients
- β1 cup red lentils
- β1 medium red onion
- β3 cloves dry garlic
- β2 tsp dried Ethiopian berbere spice
- β2 tbsp olive oil
- β1 tsp misir wot spice blend
- βto taste salt
- βto taste black pepper
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional minute.

Add the berbere spice and misir wot spice blend, and cook for 1-2 minutes.

Add the red lentils and stir to coat with the spice mixture.

Add 4 cups of water and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.

Season with salt and black pepper to taste.
