Uruguayan Cheese Empanadas
A classic Uruguayan pastry filled with a deliciously crumbly cheese mixture, perfect for a snack or light meal.
Ingredients
- β1 package (17.3 oz) pastry doughhomemade or store-bought
- β1 cup (8 oz) uruguayan cheesesuch as quesillo or queso crema
- β1 medium oniondiced
- β3 cloves garlicminced
- β1 eggbeaten
- β1/2 tsp saltto taste
- β1/4 tsp black pepperto taste
- β2 tbsp olive oilfor brushing pastry

Preheat oven to 375Β°F (190Β°C).

Roll out pastry dough to a thickness of about 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a bowl, mix together cheese, onion, garlic, egg, salt, and pepper.

Place a spoonful of the cheese mixture onto one half of each dough circle.

Brush the edges of the dough with olive oil.

Fold the other half of the dough circle over the cheese mixture and press edges to seal.

Use a fork to crimp the edges of the empanadas.

Brush the tops of the empanadas with olive oil.
