Norwegian Cod Casserole
A traditional Norwegian dish with delicate, flaky cod and a casserole twist.
Ingredients
- β4 delicate, flaky cod filletsfresh and sustainable
- β1 casserolehomemade or store-bought
- β2 tablespoons butterunsalted
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 medium potatopeeled and diced
- β2 tablespoons all-purpose flourfor thickening
- β1 cup milkwhole milk or half-and-half
- βto taste saltflaky sea salt
- βto taste black pepperfreshly ground

Preheat the oven to 375Β°F (190Β°C).

Rinse the cod fillets and pat them dry with paper towels.

In a large skillet, melt 1 tablespoon of butter over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the chopped carrot and cook for an additional 2-3 minutes.

Add the diced potato and cook for 5 minutes, stirring occasionally.

Add the flour and stir to combine, cooking for 1 minute.

Gradually add the milk, whisking continuously, and bring the mixture to a simmer.

Reduce the heat to low and let the sauce simmer for 2-3 minutes, stirring occasionally.

Add the cooked vegetables and sauce to the casserole dish.

Place the cod fillets on top of the vegetables and sauce.

Dot the top of the cod with the remaining 1 tablespoon of butter.

Season with salt and pepper to taste.

Cover the dish with aluminum foil and bake for 12-15 minutes.

Remove the foil and continue baking for an additional 5-7 minutes, or until the cod is cooked through and flaky.
