Thai-Style Delicate Couscous Casserole
A flavorful and aromatic Thai-inspired couscous casserole made with delicate flavors.
Ingredients
- β1 cup Delicate Couscous
- β2 tablespoons Vegetable oil
- β1 medium Small onionfinely chopped
- β8 oz Mushroomsbutton or cremini
- β1 medium Red bell pepperfinely chopped
- β2 tablespoons Thai red curry paste
- β1 can (14 oz) drained and rinsed Chickpeas
- β2 cups Vegetable broth
- β2 tablespoons Soy sauce
- β1 cup Coconut milk

Preheat the oven to 375Β°F (190Β°C).

Heat oil in a large skillet over medium-high heat.

Add the onion, mushrooms, and red bell pepper to the skillet and cook until the vegetables are tender, about 5-7 minutes.

Stir in the curry paste and cook for 1 minute.

Add the chickpeas, broth, soy sauce, and coconut milk to the skillet. Bring to a simmer.

Stir in the couscous and cook for 2-3 minutes or until the liquid has been absorbed.

Transfer the mixture to a 9x13 inch baking dish.

Cover the dish with aluminum foil and bake for 25-30 minutes or until the casserole is hot and the couscous is tender.
