Rajma Masala

Ingredients
- β1 cup, drained and rinsed kidney beans
- β1 medium, chopped onion
- β2 cloves, minced garlic
- β2 medium, diced tomato
- β1-inch piece, grated ginger
- β1 teaspoon cumin powder
- β1 teaspoon coriander powder
- β1/2 teaspoon garam masala powder
- β1/2 teaspoon red chili powder
- βto taste salt
- β2 cups water
- β2 tablespoons oilfor cooking

Instructions

Heat oil in a pan over medium heat.

Add onion, garlic, and ginger. Cook until the onion is translucent.

Add cumin powder, coriander powder, garam masala powder, and red chili powder. Cook for 1 minute.

Add tomato. Cook until the tomato is soft.

Add kidney beans, water, and salt. Bring to a boil.

Reduce heat to low and simmer for 20 minutes.
